Background:

Dr. Dzurec obtained his B.A. in Psychology from Fairfield University (Connecticut) in 1971. He then went to the University of Connecticut and received an M.A. in Higher Education Administration and Counseling in 1973. He worked for one year as an Assistant to the Dean of Students at UConn. He then went to Ohio State University and earned a B.S. in Food Science in 1976. After graduating from Ohio State, he worked in the dairy processing industry for three years before entering a doctoral program in food science at Cornell University. He was granted a Ph.D. in Food Science from Cornell in 1982. He again worked in the dairy processing industry for five years. He then joined the faculty of the Food Science and Nutrition Department at Ohio State University in 1987. From there, he went to the University of Maine as an associate research professor in the Food Science Department in 1992. In 1996, he moved to Oregon where he was Executive Director of the Northwest Partnership for Environmental Technology Education and then interim director of the Academic Support Center at Oregon Institute of Technology. In 2000, he returned to UConn and joined the faculty of the Nutritional Sciences Department as an Associate Professor and Extension Food Scientist. He held that position until January, 2004 when he joined the UConn Animal Science Department. He has published about 12 reviewed articles and many extension publications.

Research Interests:

His major research interests have been in food product development, specifically frozen and fermented dairy products; sensory evaluation of foods; food safety and hazard analysis.


Extension Interests:

As Operations Manager of the UConn Creamery, Dr. Dzurec is responsible for production of all UConn ice cream. He also looks after sanitation and maintenance of the Creamery. As Extension Associate Professor of Food Processing, he will be offering workshops in ice cream manufacturing, dairy plant sanitation and cheese making. He is also responsible for two annual Connecticut Vo-Ag contests in dairy products and food science.

Hobbies or Non-Academic Interests:

Dr. Dzurec lives in Storrs with his wife, Laura, who is the Dean of the UConn School of Nursing. Three of their sons, Paul, Charlie, and Dan live at home where Paul is a graduate student at UConn in Political Science, Dan is a high school junior and Charlie just completed high school. Their oldest son, David, is a doctoral student in colonial history at Ohio State University. Their daughter, Katie, recently completed her law degree at the University of Oregon. Dr. Dzurec is an adviser for AGR fraternity at UConn and for the UConn Red Cross Club. He is a Red Cross certified instructor in Lifeguarding, First Aid and CPR. He is the scoutmaster of BSA Troop 56 in Storrs where his son, Dan, is a scout. He is a scuba divemaster and assistant instructor. He likes to kayak and boat in Maine and work around the house.
